Chia Seeds what are they? and where do they come from? 

Answer they are a native plant of Argentina, Paraguay and Mexico, they originated as a food source for the Aztecs and Mayan Civilizations.

The word Chia means" strength " both cultures used the seed as energy boosters making it easy and nutritious to add to many foods. 

(3) tablespoons of chia seeds is only 160 calories and is rich in omega 6 fatty acids, add to that it has (5) grams of protein (12) grams of fiber, 20 percent of your daily requirement of calcium and iron, and 10% of your daily value of vitamin A, and (8) percent of our daily recommended vitamin C.

Studies have shown that this little seed slows down our bodies conversion of sugars making this a perfect meal add in for Diabetics. The seed also helps with over-eating issues because it has a gelling effect in our GI tract.

Chia also helps our hearts absorbing liquids to stay hydrated helping our bodies during rigorous exercise, and more omega 3 than salmon with far less calories too.

Mixed Fruit Cobblers


Fruit Desserts? Yes and Low Calorie too... How can that be? Well I will share that with you too.

When I make these fruit desserts I usually use frozen organic fruit mixes. You can mix and match them and that way you get good quality fruits and a larger variety of choices during the Winter season too.

Put your fruit in a large mixing bowl if frozen let thaw before adding sugar and spices to it.

Ingredients:

2-4 cups of mixed fruits
1/2-3/4 cup of white or brown sugar
1/2 tsp. of ground ginger
1/2 tsp. cardomone
1/4 tsp. nutmeg
1/4 tsp. cloves ( optional)

Mix all together in bowl with fruit till blended. Set aside and prepare cookie crusts for cobbler.You can use any type of cookie you like for crusts but I prefer Vanilla wafers for mine, I use a processor to make then into crumbs then add a 1/4 margarine or butter( depending on your fat allowance), app to the mixture to make it like a crust mixture, I then put some into each muffin cup with a tsp. spoon, form it into each cup and bake them@350' for app. 3-5 min. till lightly brown. 
Then take out cool them and add the above fruit mixture, you can serve these little morsels with whip cream or Vanilla Bean Ice Cream, even Carmel Ice cream is delicious too, your choice....

What do sweet potatoes do for your body? They are full of radical killing antioxidants, which assist our bodies in blood sugar regulation. Then they are full of fiber which also helps our colons, the next thing is they are calorie free, Yes and sweeter than regular potatoes and healthier.just one sweet potato is a 114 calories, but,,, it gives us 377 % of a daily intake of Vitamin A, this vegetable is a guilt free snack that is good for you.

So next time you are craving a snack, why not make yourself a baked sweet potato instead, your body will thank you for it and so will your waistline.

Okay we are 3 days into the New Year so how are the Resolution's going for Ya??
Me, I stopped making them year's ago, why you may ask, since I am a A personality type I already had them on a get it done list...:):):) Yep sometimes Anal retentive about things, but oh well we are all made different....

So in keeping with my get done list I am posting this year's first food blog and it is a goodie...

Like steak? who doesn't, but you get tired of it just plopped on a plate, so I made these Kabob's for a client of mine, and added some crunchies too, like zucchini chunks, Portebello Mushroom's, Bell Peppers, then poured a Ginger/Garlic Marinade over it all and baked them @ 350 for app. 35-40 min. till med and veggies were soft. Whala you add some rice, or noodles and you have a complete dinner in under a hour, I bet you are spinning around in your kitchens now saying maybe this year won't be so bad after all, I am so Happy I could be of help,, remember I am The Diva of all that is Delicious and Healthy, so keep reading my blogs each week and please share them with your many other foodie friends, who doesn't like more fellow foodies and friends.
