Ginger Steak #48

Ginger Steak & Edamame Beans
Comfort Food:
Whole grain rice, flank steak,edamame (soybeans) and a little fire added to round out this yummy dish.
When I plan my evening dinners I always , always spice things up a notch.
Why?
Because the heat of spices are very good for your body.
How?
It breaks down our cholesterol,and buildups in our arteries.
It also adds flavor and we use less salt because it is not needed.
When you do you own meal planning look at what you have for (Hot) Spices in your cupboards.
Experiment with a couple of them, on a smaller scale at first so to not burn anyone out of trying their first bite.
After a few meals with some heat added to their palate, they will not even notice the heat but will notice the additional flavor it brings out in each meal and also adds to as well.

Some spices to try:
  • Cayenne
  • Cumin
  • Ancho
  • Pepperika
  • Red Pepper

Alexander's Greek Chicken!


Alexander's Greek Chicken 
I named this chicken dish after my father,
Alexander Harry Ianos.
Or as he liked to call himself
"Alexander the Great "

He was very proud of his heritage, and often told people he had ancestral roots to the great Kings of Greece.
Well I know we had Spartan blood in our veins, because if you disagreed with him
there was definately sparks, swords, and tempers all over the place!
Yes he was a male Diva in the kitchen but his food was to Die For! 
So Yes I can be the same way @ times with my creative temperament, but I do not throw anything @ you!
The Greek chicken dish is basted with a chickenbroth & lemon sauce, 
garlic & oregano& sea salt and seared first then baked @ 375 for app. 40 minutes till inside temp@165' which is done to safety rules.
I served it over angel hair pasta mixed with a garlic & caramelized onion and topped with a feta & kalamari olive cheese mixture.

If my Dad was still alive he would of said I hope,
that this was up to his very High Standards!
So this dish is for you Dad, tell the guy's I say Hi, Your daughter; Gianna.

Sugars #48

Sweet, Sweet Sugar...hmmmmmmmmmmmm!? 
 It looks better on paper than in Us!
Why?
Mini-Chocolate Truffles
Because we eat too much of it, have too much of it in our diets, and we ae becoming obese because of it!
The above picture is of my Mini's Chocolate Cakes. (15 calories each)
They are a small bite of Orgasmic Delight!
Very Low in sugar, Low in calories, and full of dark chocolate flavor!

My secret, using Greek Yogurt for 1/2 of the sugar the recipe called for instead.
This cuts down on the sugar overload taste for us and the recipe.
Of course you need to keep balance in the recipes with wet ingredients but that is what I do for a living, so it works.
For you I suggest elimanating (1) egg of recipe and cut back on other liquids such as oils, or waters.
Once you have played with it once and make a sample batch and taste one then you can always add more of something, but cannot back it out!

So let's look next at what types of sugars are really good for us in moderation.
  • Brown Cane sugar
  • Turbinado (Hawaiian sugar)
  • White 
  • Honeys
  • Fruit sugars
These are all of our Natural choices, and should not be confused with Artificial Sweeteners.
Nor should we use Artificial sweeteners in excess in our diets as the word says it Best,, Artificial.

Spaghetti Bolognese

Spaghetti Bolognese
This is one of Divadish's all time favorite comfort foods!
It is rich, full of tender meats, and it is definitely one to Lust for!
The sauce is thicker , because it has tomato chunks in it and chopped onions.
The combination's of simmered meats, and a special mix of seasonings, and letting it slow cook for over 8+ hours gives this dish it's rich but delicate taste.
For this particular  recipe I used Flank steak & 93% ground chuck.
I browned them in roasted garlic & olive oil,added my special seasonings.
Then added it to my chunky tomato sauce base, it is a nice and thick sauce and it holds on to the pasta noodles like you would to a Life Raft if you were drowning in a sea of Tomato Sauce!
Now of course this would not be a complete meal without a large Italian/Feta Salad and of course a loaf of sourdough bread.
Of course for dessert you would add a mini Raspberry & Chocolate Cheesecake, to complete your dinning experience.

Organic # 46

Organic or not Organic that is the real question these days?

How do you decide?
What exactly is organic?
Will it be hard to eat this way?
What will I be able to eat?
Will the family eat it?

These are all good questions and let's answer them.
  • Eating naturally takes patience, and relearning> It is about making better healthier choices, skipping the fast foods, and convenience foods, and making time to make something and somethings from scratch!
  • Whole grains, no additives, no BHT's, No Processed.
  • No not hard but different, you will enjoy food more because it will taste better, richer, more pure, and satisfying too, because it is not filled with empty calories.
  • Sure everyone will eat it, as long as you are not forcing them to try something really Weird... These are normal foods but the way & what we put in it, or how we choose our products is the key to eating organic.
