Soups

"Moroccan Lentil Soup" 

The weather is warming up slowly, but soup is good anytime. A bowl of hearty soup a slice of artsian bread 
paired with a salad and you have a complete meal... So without further adieu' here is my recipe for Moroccan Soup.


Ingredients:
2+onions chopped
2+ cloves of garlic or (Minced in Jar too)
1 tsp. ginger
6 cups water
1 cup of red lentils
1 (15 oz)can of garbanzo beans,drained
1 (19 oz.) can of cannellini beans
1 14.5 oz) can of Hunt's diced tomatoes
1/2 cup chopped celery
1/2 cup chopped carrotts
1tsp. garam masala
1.5 tsps ground cardamom
1/2 tsp.ground cayenne pepper
1/2 tsp. ground cumin
1tbsp. olive oil
Sautee onions garlic,carrots, celery,and sesonings .
cook lentils tiil soft, add reminder cooked beans, and then add the sauteed vegetables.
Then simmer all together for another 1+ hours till flavors blend together.


This is completely Vegetarian, Spicy, No Cholesterol, high in fiber & protein.
It will become a family favorite.
If you have to add meat I would suggest a mild Italian Chicken Sausage.
