ALMOND JOY COOKIES:::

I really Love cookies, because as a kid my Mom and I would dunk them in Milk, it was our special time we spent together, laughing and enjoying each others company.

Now sometimes they were store bought Oreo's or Lorna Dunes, or Fig Newtons, but most of the time they were Home Made.
That's why cookies are always something I have on hand in my cookie jar, or flash frozen to eat later.

The ones pictured are Almond Joy's, I tweaked my original recipe just a bit by adding Coconut syrup 1/3 cup
then adding 1/2 cup slivered almonds crushed into pieces,then the final twist a 1/4 cup of sweetened coconut.

Now of course you could add almond extract to, but I didnot want to for this recipe.
These turned out very noist, with a nice almond flavor, and a little chewy texture because of the coconut.
It was truly like eating a Almond Joy Candy Bar when they use to be delicious!

Pasta

I would not be Italian and my grandmother Julia would roll over in her grave,,, if I did not make a Pasta dish at least once a week!

Here is one of those I can't get enough of dishes...!

It has a very Fancy Italian name, but I choose to call it what it is,,, Angel Hair Pasta W/Sausage.
Of course there is a little more too it then that,,, it has sauteed red onions,green bell peppers,chunk ripe tomatoes,
all seared in dark green olive oil, with fennel, anise, garlic, and sweet basil, add a touch of Sea Salt to the last few secs of cooking.
When you serve this to your guests they will think they have been treated to a Fine Dining Italian Experience!
And so they should, it is a puttsy dish to make but a delicious one to enjoy, so in my book that out weighs the puttsy.

Porkchop Pizza

Divadish Kitchens created this new Meat-Eaters- Pizza for all of those Carnivores!

I use Boboli  as my crust. I just Love the texture of them, and they are all organic, No -Saturated Fats,
and Low in Calories.

Take Boboli crust and spread a thin layer of garlic and olive oil mixture over it and put under broiler for a few minutes.Then proceed with your layering.
I took a Grilled Pork Chop,sliced it and added yellow bell peppers, red onions,and mushrooms.
Sauteed all of this in a small frying pan in a little of olive oil and garlic.
Added Sweet Basil,Fennel, Anise,and Thyme, simmered and started the layers.

When all of mixture is spread out on top of crust add (3) cheese blends and grated Parmesan Cheeses, and a tad of Sea Salt.
Bake @ 425' for approximate 20-25 minutes, depending on your oven. Keep an eye on crust.
Cut in slices, app. 8-10 slices per large pizza.

Add a Greek or Italian Salad and sliced Pears or Apples and you have a delicious meal.

Stuffed Peppers!

Stuffed Green Peppers by Chef Gianna owner of Divadish Kitchens & Catering

This recipe has been in my Mother's family over a 100+ years.
All of the Messano's and the Ianos's have tweaked it a bit over the years, but it still is our Comfort Food dish.
Especially when the weather gets colder we all turn to heartier meals.

My recipe uses lean ground organic beef & ground pork sausage.
No rice added to meat mixure, instead I did it like a meatloaf base.
Added fennel, anise, onions, garlic, sweet basil,red pepper, sea salt.
Mixed it all together and stuffed those peppers so full they squeaked for Help!
Covered them with a rich marina sauce, Parmesan cheese, feta, and slow cooked @ 325' for about (1) hour or so.

Heavenly does not even come close when I served these for my own dinner with some nice crusty bread I made earlier in the day. Of course pouring extra sauce all over it, and sopping that up with my delicious homemade bread was divine!

I really do Love to Eat Well, and want my clients to enjoy my original recipes too.

Chocolate Cake

The expression a picture is worth a 1000Words, is so true, I mean just look at it and it makes you Drool all over yourself!

The cake is a double fudge chocolate, with the following extras added to batter.
a 1/4 cup of caramel 
1/4 cup chocolate bits
baked @ 350' degrees in a bundt cake pan form app. 35-40 minutes

Icing is a chocolate fudge drizzled over top with chocolate bits and powdered sugar over that.
It was so moist and Yummy, it is all anyone could do not to skip the slice and just grab a Big Hunk instead!

I so Love a Chocolate Addiction don't you!!!!

This cake was a custom order for a Realtor's Broker Open.

Pizza

Divadish Kitchens & Catering Loves, Loves, Loves Pizza!

That is my pizza made with the Boboli Crust.

Using this fantastic crust gives you a Pizza even Pizza Man cannot compete with, and it tastes so much better!
The one I am featuring this month is a Alfredo sauce with Grilled seasoned Chicken and sauteed red onions and green peppers.

The first step in preparing your Boboli is to spread a thin layer of olive oil & garlic powder mixture over both sides of crust.
Next bake it @ Broil temp. but watch it closely it is only to crisp it lightly!!!!
Next take out your crusts from oven spread your Alfredo sauce on crusts medium amount.
Then add your chicken, green peppers,and red onions  generously over pizza crust.
Top all of this with crumbled Feta, (3) cheese blend cheese,Kalamari olives,and a sprinkle of Fennel seeds.
Bake @ 450' for 10-12 minutes ( but watch it so crust does not get over cooked.)
Take out of oven and slice this delicious pizza and serve it with a Greek or Italian Salad...
You will experience Heaven on a Plate, and dreams of Pizza instead of Mistletoe in your heads !

Turkey Dinner

Traditional Turkey @ Divadish Kitchens:

First thing is get a all organic bird.
Second do not get the self -basted or juiced brands
This will save you money and calories, but especially TASTE!!!
Third take out gizzards bag, and put them in a pot half full of chicken broth and Kitchen Bouquet.
Fourth: Add onion flakes, Garlic powder, Sea Salt, Sweet Basil and simmer.
Fifth: Rinse out bird thoroughly, drain, and put in oval roaster.
Add Semi -Sweet White Wine to Gravy pan, app. 1/2 cup.
Rub entire bird with olive oil & Kitchen Bouquet, add a 1/2 carton of Chicken Broth to roaster and bake @ 350'
I stuffed mine with Herb & Rosemary Chicken Broth stuffing, if you do this too you will need to allow extra cooking time.
The bird is done when internal temp is 170'
This  was a very juicy bird, and was much Loved by my family & friends.

Carrot Cake

Carrot Cake has been around forever, kind of like Aunt Myrtle's Fruit cakes...!
Only difference is everyone will eat this cake.

Being a Chef I decided to change this old time favorite up a bit.
Here is how I improved it for my tastes and hopefully yours.

First I added 1/4 cup more sweet raisins.
Then a 1/2 cup more of sweet organic carrots.
Added a little more moisture to batter.

Baked a tad longer @ 350' 
When cooled I made a Almond fudge Icing to drizzle over the entire cake.
Sprinkled Coconut over that.
Finally I added crushed Chocolate cookie crumbs.

Now this cake is in my Hall of Fame Favorites.
With this Saturday being Small Business Owners Day why not order one of these for your 
Sweet heart , or Family.

What do you know about pudding cakes?

Many people think that they would be overly sweet or gooey, but actually are not.

The one pictured above is a Lemon Pudding Bundt Cake, with Lemon Cream Cheese Icing. 

I absolutely Love Lemon anything, almost anything. 
What about You?
For Me Lemon is refreshing, light, and not overly sweet if done right.
I like my cakes light, moist, and not too sweet. I want to taste the flavors of the cake, not the sugars.

Apple Cake

Fall is the best time to enjoy Apples. The temperatures are just cool enough and still not cold.
Apple orchards are full with all of our favorite kinds of apples.
Leaving us no excuses but to create new recipes for all those delicious apples.

Here is one of mine. Apple Caramel Bundt Cake

This tastes like a Carmel Apple except inside a cake.
Moist, swirled with caramel, and small bits of apple in each bite.
It is truly the best combination to asked for in a cake and you can eat it with a fork!

I drizzled the top with vanilla icing and added small chunks of custom apple filling to top it all off!
When I made this cake I was craving something semi- sweet, but with a apple base.
This is what came out of my Divadish head, and now this is one of my favorites.
Served warmed, or just right out of the cake container this will be a family favorite.

Steaks

The one thing about being a chef is basically you can fix anything you want for dinner.
The above meal is one of those I feel like it meals.

Ever have that Meat Craving,,, ? if so this meal will satisfy it.....!

Here is how I made my steak.

First select a good quality Sirloin -Tip Steak, 2-3" thick watch out for veining, because those make the steak tough.
Always use hormone -Free meat and free range Black-Angus, that way the meat is pretty much guaranteed to be tender and healthier for you.

Instructions for preparation:
  • Cut small slits in meat
  • Use 1/4 cup dark green olive oil
  • 1/2 tsp of Garlic powder
  • 1tsp. of Zesty Salt
  • 1 tsp. of Kings Black Spices
  • 1 1/2 tsp. of Minced Garlic
Mix all the ingredients together in mixing cup, till blended, use a meat brush to cover both sides of steak with this mixture.
Heat up your griddle to 425" degrees,cook till the internal temp is 155-160 Medium -Rare. Keep turning consistently.
You do not want this to get charred, charred is not good.
Serve this Big-Bad Boy,,, with Fresh cooked mushrooms and red onions, cooked in butter & olive oil and garlic, and a medium amount of Kings Spice.
Vegetable in picture is a Organic Sweet Carrots, with a dill butter sauce.

This whole meal took app. 20 minutes to make, and it beats hands down anything you could eat
at a Fine -Dinning restaurant.

Chicken Sandwich

Chicken Breast Sandwich.

Ingredients:
  • Grilled boneless chicken breast (seasoned with Garlic powder & Sea Salt)
  • Cooked in olive oil in small skillet till a internal temp of (165)
  • Just a few minutes before taking out of pan add a slice of Provolone cheese let it slightly melt on chicken
  • Remove this and serve it on (2) pieces of lightly toasted whole wheat or rye bread, lightly buttered
  • Add lettuce, thin sliced Red onions, mayo if desired.
Get ready to say MMMMMMMMMMMMMMM, because it is one of those sandwiches which satisfies all of our foodies. Try it and see if you agree.

Hot Chocolate

Ghirardelli  Better Chocolate and it makes the "Best Hot Chocolate drink".

The fall evenings is a perfect time to add this delicious drink to your beverage choices.
Here is the recipe for a cup of deliciousness.

  • 4 0z of 2% milk
  • 40z of Half & Half
  • 40z of Ghirardelli Syrup
  • put all thee above in a meduim size saucepan and slow heat to 120-130 degrees.
  • Add whip cream and a drizzle of additional syrup to cap off this drink.
Add a good shortbread cookie or a sugar cookie to it and you have the makings of a wonderful evening.

Vegetable Soup

Divadish & Chef Gianna love, the Farmers Markets. Fall vegetables are still in abundance and there are so many wonderful choices.

The picture here is just one thing you can make from a good red sauce, and fresh market vegetables.
My freezer would not be Happy if it does not have at least (6-10 ) quarts of soup frozen and waiting to be pulled out for any accompaniment to a meal or as the whole meal, of course with my crusty bread & butter.

This soup has a new little twist added to it, my secret, Beringer Pinot Noir Red Wine. Yum. Yum.
I added a 1/2 cup to the red sauce as it slowly cooked in my double roaster along with lots of lean Pork and dark chicken thigh meats.
The vegetables used were sugar potatoes scrubbed and skin left on, more vitimins and better for you.
Sweet field Carrots, also scrubbed and skin left on.
Sweet Celery, little unknown trade secret to finding good celery, (always smell it, if it has a bitter or strong odor DO NOT BUY IT) it will Ruin your stock.

Then added a combination of Italian spices, a touch of Cumin, and a bit of Anise & Fennel seeds.
Whalla,  slow cooked for (16) hours and you have a soup that satisfies that hunger, and is low in calories, and all organic and chuck full of nutrients and vitamins. A Doctors cure for the Flu season in a Bowl!

Whole Wheat Bread

Yes... Divadish Kitchens makes it's own Artisan breads.

The one pictured above is my own recipe of Honey Whole Wheat. 
Using Organic whole grain flour,course  Kosher Sea Salt, and Sunflower Honey.

Then slow baking it with care and you have a crusty, soft, chewy bread.
Just the way you want it to be, add some sweet cream butter, jam, or just  plain, the problem will be waiting till it cools a bit.

Baked in small batches and all done by Hand,,, each batch makes (6) round loaves.
We sell this loaf of deliciousness for $4.00 each.

The Organic grain flours I use are :

Rye
Wheat
White


I also make Sage, Garlic, Hot-Pepper, Brown-Sugar & Raisin or Date & Raisin Seasoned breads.
Rye Bread, (Caraway or plain ), Honey Wheat, Sour Dough White.

No Preservatives, No things or ingredients added that you cannot pronounce, this bread is Nutritious, Healthy, and Low in Calories.

Chocolate Cake

Chocolate Toffee Cake
This perfect Bundt cake is now my new favorite cake.
I created it for a family member and when we all sample it, we were like OMG this is so good!


I added Chocolate sauce to the batter, English toffee flavoring,and the results were just the right amount of sweetness and deliciousness to make your mouth water when you look at the end result pictured here.

The icing is made from Semi-Sweet Chocolate& Butter drizzled lightly over entire cake, then added crushed Heath bar bits over that, finally toasted almonds to finish off the Masterpiece.

I Love meatloaf in the Fall, it is such a Comfort Food, who wouldn't!
Especially leftovers if you are lucky enough to have any!

Picture this literally, sliced thinly on my artisan rye bread, both sides lathered with butter, and then top all that off with (2) slices of Provolone cheese. Then take all this to your broiler for just a touch of heat, and whalla you have your very own Meatloaf Pannini! Can we give a Loud AHHHHHHHHHHHH!

Or how about this scenario: A very thick slice of my Brown Gravy Meatloaf, sitting next to a  VERY BIG SCOOP OF GARLIC FETA CREAMY MASH POTATOES, which are topped with a slice of butter for the additional deliciousness,of course the plate needs to be rounded out with my Italian Green Salad, and a slice of artisan rye bread with butter.

Soup's On @ Divadish

Spaghetti Soup  
Divadish  believes the best quality and taste comes from making your food in small Batches and by Hand!
This is the only way to make good food says Chef Gianna, and good food is what Divadish is all about.

The picture above is just one of those small batched soups that comes out of our kitchens.
Chef Gianna likes to call it one of her Masterpieces, because it is not a watery, thinned down version of what other resturants tell you is soup.
It is thicker, full of meats & vegetables, cheeses, and it sticks to your stomach when eaten.
Which means when you take your first mouthful you go ahhhhhhhhhh, now that is more like it!

This is a Fall soup and we need our soups to keep our bodies warm through the change of seasons in Minnesota.

Pumpkin Muffins!

Pumpkin Muffins
The air is crisp, the leaves are starting to change, and our minds drift off to warmer meals, and pumpkin desserts.
This is one such dessert. Prepared a touch different than most recipes which are all sugar and not so much pumpkin. 
At Divadish we want to focus our attention to all the flavor of pumpkin has to offer. Combined with spices, a cinnamon and butter base and sprinkle it all  with a crumble topping and spiced icing.
These little babies are moist, light and just the right amount of pumpkin and spice.

Chicken Soup Cures Everything!

Chicken Soup
My mother use to make a big pot of chicken soup at least once a month when we were kids growing up out East.
She would always say it can cure everything, if you are a little anemic, it helps, if you are a little fluish it helps,
and if you are just plain hungry it fills you up!
No my mother was not Jewish, but she could of been, she had the mannerisms and definitely the hand movements.
When she was a young woman she was a housekeeper for several different ethnic families and she would gather in the kitchens when her work was done and sometimes cook, her Love of Good Food and sharing it with family and friends is where I have gotten my passion from.

This picture is a little different recipe though, it is made with broccoli & chicken stock, loads of chunk chicken & carrots. I added some cream of mushroom soup base and some half & half for additional flavor and richness.
It made 12 Quarts of creamy goodness, that I froze some for later, soup is never ever a bad thing, and compliments every dish as either a main meal with crusty bread, or a starter dish.
