Best 2013 Food Events!

Divadish Personal Chef Services & Private Catering  Top (5) Food Events

Number (5). Paisley Park  Cooking for the one and only Prince himself on two different occasions! This was not a Easy Deal.:(

Number (4).Cooking 
Demonstration for a CEO and her soon to be going off to college niece, her grand mother, and best friends.What I was not expecting was off - color humor, lots and lots of you knows, and what not to do in this situation discussions and Laughter that was the loudest ever!

Number (3). Cooking Class for (25)  Women who without their I phones instructing them could not get anything done:)

Number (2). Cooking weekly for a fabulous couple who became two new friends . This was a (6) month cooking contract given by her sister as a thank you gift. 

And number (1). Will need two spots for a tie of (2) gigs that both need mentioning here.

(1)  A. Spot goes to my 100 Th Birthday party for The Best Looking woman of the year who as far as I could see did not look a day past 80.! Best party ever, best people ever and still one of my fondest cooking memories shared.

(1) B. Spot two goes to my Brazilian Christmas Eve Dinner for 12+ family members who flew in to spend their first ever time in America with there very sick Dad @ Mayo Clinic. Their Dad phoned me to persuade Me to supply a full cooked Traditional meal for his family so they could enjoy their family and share in good food,laughter and the warmth it brings by doing so. This was a Big order and one I did not take willing as I was overbooked, but did it anyway because of circumstances, I was very glad I did. :)

So there you have fellow Foodies of 2013, I have been Blessed ten fold for 2013 and count myself very lucky too have been able to share my self and my talents with others who have given me many more stories too share for 2014 which is fast approaching. After all Life is about Stories and the Memories it creates, but it all starts with Good Food:) God Bless Everyone for the rest of 2013 and for our soon to be New Year 2014! :) Thank you and I hope to making more memories and stories for future years!

Brazilian Tiny Tim Christmas Carol


Every once in awhile you take something on even though it is near impossible at the time. 
Well I did that this week, I took a very large private Catering event even though I was already booked and overextended. 

It probably was not the smartest decision I ever made but it was the Best and Right one I ever made.I will tell you why in the following story.

On Friday December 20,I got a voice message from Mayo Clinic asking me if I could call him back as it was a matter of dire urgency.My first thought was okay this sounds hokey, and maybe someone dialed the wrong number, it happens all the time, one digit off and you are ordering pizza instead of plumbing:) But I called him back just to make sure, I didn't want to be rude and I was curious as a Cat.

What I found out after talking with him was he was very sick and staying @ Mayo for treatment and his whole Brazilian family of (12) decided to surprise him for Christmas because they did not want their parents alone in America over the Holidays. Now this is a Wonderful Tiny Tim moment and all but how was he going to provide food for all these people. 

I said I understand but I am already doubled booked I can't do it, I say goodbye and figure that is the end of it, well, not quite, he calls back and says he has a solution for me to consider. Hmmmmm? so I call him back to find out he will pay me a premium rate + and if I could cook ahead his meal his daughter can reheat it so everyone can celebrate a traditional American Christmas. Well I said Yes, and I am not Sorry I did even though I feel like someone shoved me through a hole and then back again:)

Now everything is finished they will pick up bags and bags of delicious food and they will be able to celebrate on the holiday all together in their first American Christmas.

So when you pick up your phone sometime and get that call that you think is a hoax, you just maybe doing what I did giving a Tiny Tim's Christmas to Everyone and as he said it so aptly,

SAD SYMPTOMS

SAD is depression that occurs at a specific time of the year. Experts say it is related to hormone regulation, body temperature, and seasonal variations in sunlight.

Check this list for SAD Symptoms

*weight gain

*trouble sleeping
*poor concentration
*irritable,and anxiety
*avoiding social activities
*drinking or self medication
What can you do or who can help?
Always talk to your primary Doctor and discuss any or all new symptoms, this could be something underlying such as diabetes, thyroid, or high blood sugars creating similar symptoms or conditions.

Treatments light therapies, prescription medications. antidepressants, psychotherapy.It is uncommon says Dr. Daniel Thomason that there are not other chronic conditions the patient is dealing with.

I hope this article has helped and for more information check with your Dr. for other tips for SAD Season, December 21st, does not need to be our shortest day with help from the right people.

Being Pack Animals and having good friends and family to help and check in with along with a healthy diet, moderate exercise is other things that keep us all functionally normally in today's very busy world.

Some of us have Bad Habits example nail biting, grinding our teeth, snoring, wearing contacts all night with day wear contacts. Let's break this down a bit more, nail biting can cause infections, grinding your teeth wear down of your teeth, contact wearing irradiated or torn corneas.

Overexposure to sun, you use sunscreen for skin right? at least most of the time. Overexposure to sun increases the risk of getting macular degeneration or cataracts.

Breaking Habits: Wear wrap around sun glasses with UV blocking materials to help protect your eyes.

Poor Diets: Eating that fat laden burger & fries, excessive Fast Food menu choices, Drive through is your how you eat, these add up to a larger waistline, obesity, Diabetes, Heart problems, these conditions contribute to damage to the blood vessels in the retina's of the eyes,a condition called Retinopathy.

Screen Strain: Computer work, or gaming for endless hours adds strains and fatigue of our eye muscles Eye muscles are used when we focus so tired eye muscles will leave all of Us with dry, burning eyes at the end of a long day of screen time.

Break the Habit:
Give your eyes time outs. Follow the 20-20-20 rule, look away from the screen and focus on something else 20 feet away for 20 seconds, this will help relive your eye strain and help with the conditions from it.

Divadish has always cooked Heart Healthy foods that supports the Mayo Clinic Eating Lifestyle .Eating this way eliminates the so called myths to what you can eat on many diets.

These myth's are for Diabetes and information is from Dr. Brulinda Narario, MD.
Here is a short list of some of those myths that are out there:

Myth 1.You need to give up starchy foods and sweets.
Most of the time you want to eat the whole grains, veggetables, lean meats or beans. But occasionaly you may have that 1/2 cup of ice cream you will have to adjust your diet to adjust for it but you can have it. Same for that cookie, piece of cake, always adjust your intake afterwards.

Myth 2. Managing diabetes means hours of exercise:
Not necessarily. While it is true exercise reduces blood glucose, you don't have to be a gym rat! 10 minutes walking, moving your body, standing while eating, moving your arms in circles, taking the stairs, parking your car further away in parking lots, all of these extra things add up significantly it is the little things that make the difference.

Myth 3. You can't prevent complications from diabetes:
A British study of 5,000 people with Type 2 Diabetes showed those who reduce their A1C ( average blood sugars) over a two - three months saw a 1% decrease in the risks of complications.

Remember you are in control of your health each and everyday, but we are only Human and sometimes do not follow all  the rules, the right information and asking your Dr's for help plus getting yourself a good Heart Healthy Diet all of these things and just trying to do it consistently makes the difference between Disease today or not.

These are but some of the things you can do daily but your eating is always the biggest key to all of our  heath issues. Good food is our foundations and without a good strong one we are all weakened. I hope this information is helpful and useful to everyone.

Greek food is a wonderful taste in your mouth and something I prepare for my clients when asked or ordered from my web site.
The seasonings and spices are all from original recipes created by me and experience and style by both my parents Catherine & Alexander Ianos.

What sets this ethnic food apart from others is the combinations of textures, seasonings, and flavor.

It is like they say once you try it you are addicted and can't seem to get enough of the Greek Stuff!:)

Greek Chicken is just one of those meals, the skin is nicely crispy and the meat is moist and has a slight fragrance of Anise that makes it so wonderful that you go all Yummy inside.

Cheddar & Bacon Quiche'

Quiche' anyone?

Divadish loves new things, and eating them too. Before I allow any of my food to go to my clients I make sure I test them out myself. :) Of course this is such a terrible imposition for me but Heh someones gotta do it!

The above Quiche' was one of my most recent creations. Egg bakes which is what Minnesotans call them, because Quiche's sounds too Foo-Foo for guys....:) but mine are anything but ,,, they are heart healthy, and hearty too.
The one pictured has organic cheddar, spinach,  sodium reduced Hormel bacon, organic eggs, and organic cream, blend all that together add a little onion, some cilantro, a little garlic a dash of sea salt and sweet basil and call it delish!

Add a couple of hearty slices of rye bread with butter and some honey crisp slices of apples and you have a healthy meal that is filling and good for you too. What else is there in Life? delicious food, friends and family to share it with, and calling The Diva to do it all for you!!

Simple Kitchen Cleaning Tips!

Divadish  Kitchens & Catering Loves cooking, but she also Loves to clean, I know I'm Weird...:) but it calms me what can I say, blame it on my Mother!

My Ma as we call her had two favorite sayings, "keep your kitchen and your bathroom always Clean"

Now we won't talk about the second one but I am sure you know why?!
We do spend a lot of time in both areas and for good reason. 

Here are some simple tips to keep your kitchens clean that I found in my local paper Lillie News, wonderful and quick tips that will help make our kitchens shine and be Food Safe.

1.Line your refrigerator draws with plastic placemats. This makes clean ups so quick and simple, simply remove them take to the sink and wash off with soapy warm water.
They come in all kinds of colors too so you can decorate the draws at the same time.

2.Let the kids help clean, a lot of manufactures are making kid friendly bath and kitchen fixtures so it makes it easier to clean and also easier for your kids to help.

3.Clean with baking soda. It is cheap and it makes everything shine. Examples from tile flooring, backsplashes, inside the fridge, too also deodorizing fridge .
Make a solution of 1/2 baking soda to a 1/2 gallon of warm water and start scrubbing away all those spots!

4. Brighten brass and copper:On pots & pans, use a small amount of ketchup on a soft old rag and rub. Once the tarnish is gone rinse with warm water and towel dry.

5. Buy smudge free appliances when possible, saves all those sticky fingers marks and everything else too.

6.Spills and sticky juice rings: Use a small amount of hydrogen peroxide and ammonia with a small amount of warm water dip a soft cloth in it and wash away those sticky rings spills and whatever and you are set to go!

I hope all these quick cleaning tips helps everyone so we all can have safe and clean kitchens and have more family and Me time.)

Asian Pasta Salad

Divadish likes different things and likes to share those different recipes with her clients too. We get tired of cooking the same things too, so we step outside those boxes of cooking like a artist does her first watercolor or a architect does his first cabin home, we Love the challenge and the mystique of what if?

When this happens we learn something about taste and textures and it results in a new recipe we then can share with our clients and  it enhances our own experience.

As the politicians like to say it is a WIN, Win, for ALL!!!

This particular salad pictured has bow tie Barilla pasta, a  Mixed Ginger Garlic Sauce in the chicken mix and as a dressing, then a toasted ginger sesame seeds with a touch of orange added in, black olives, soy sauce and topped all off with sweet clementine oranges for color and taste, also adding another layer of texture to your palate too.

When you Love cooking like I do it is the challenge to twist things up in our kitchens when we are creating a new recipe,you want to make it just a little different, a little better if you can, or a little richer! I so Love it when it comes out just right and I can do my Happy- Dance all the way to my clients house... Yippee for all and I get the bonus of sharing it with someone else, so if you would like to share in my dance please feel free to call when you need a little dancing going on in your kitchens.

Italians have eaten sausage and peppers probably before they were given breast milk! :) It is a really delicious combination of flavors and textures that when you take that first bite your mouth does a HAPPY-Dance.... I know I certainly do when I make mine.. The seasonings and the aroma's make your mouth water from the first bite to the last. Serve it with a crusty hearty Roma bread or a Rye bread slathered in butter or dipped the bread in olive oil and then scoop a generous portion of the sausages & peppers mixture , if you make it to the table before you eat the whole thing, you are a better person than me. I usually get another one going because that one is completely gone before I get that far.

Good food is important. There is no other way to say it, why settle when you can and should eat the very best each and everyday of your Life. 
Yes Life it  sustains us, feeds us, helps us stay as young and vital as we possibly can through good nutrition, which is Food. 

We as a nation have so many more good choices here than in other countries, we need to exercise them. STOP reaching for the Processed foods, the Microwave foods, or the Grab and go foods. Stop listening to the Millions of Food commercials that tell you this is Healthy, because that is called Marketing and they don't call the TV ( Boob Tube ) for nothing. 

Why are we overweight? why do  shows like Biggest Looser make MILLIONS for( Personal Trainers) and then those poor people are duped into thinking that this is the way to do it!? No it is not, it is hard Yes to loose significant amounts of weight, but done through good nutrition moderate exercise and a good support home base you will not need The Biggest Looser you will be your own Biggest Looser because You did it as a Lifestyle change.

I have preached this to the choir and I still do,
 it is so important what you choose to put in your Pie Hole....and it should not be Pie.... (
Put into it a well balanced diet and I am using that word as what you should be eating not that this is a Diet...ok! 

70/30 meaning 70% Veggies and fruits. FRESH Or Frozen is okay too.
30% Lean Meats & Fish
Eat 6-8 times a day,(smaller meals are better so you always stay full and are less tempted)
Snacks are (3) times but should be veggies with a little sour cream or low calorie dressing.Sweets are not bad as long as they are good ones. Not from the shelf. You must pick the kinds with the least amount of processed in them. Or bake them yourself. So if you have a sweet tooth, you have to do your homework so you are not hunkering down with a box of Krispy Creames every night ok!
I have told all my clients who have struggled with their weight when you stop treating it as your enemy and realize your body is your Best friend it makes a Big difference how you see things so differently. Perception is everything, so spend sometime with yourself, go over what your goals are, look at yourself in the mirror and like or not and do something for You, the Holidays are coming very soon, and that is our biggest time of the year to overindulge, and we all suffer because of it. So do yourself a favor, everything in moderation and everyone is a WINNER!

This meal will satisfy the most discerning foodie, because the Veal is moist, delicately balanced with seasonings and  just the right amount of breading to make this just melt in your mouth from the first bite to the last.

Mini's Cheesecakes @ Diva's !

These little delicacies are so light and delish you almost forget they are loaded with calories. Good ones because they are all organic ingredients and they are Mini's..
So as  Elizabeth Taylor use to say a bite of anything won't hurt. You can always spit out the rest... Hmmm don't think you will do that when you take just one bite.!

I make these with Philadelphia Cream Cheese and only about 1+ cup of white sugar, eggs and real vanilla, whip everything together and pour cupcake liners 3/4 fill. Cook 15+ minutes until jiggly, take out of oven and put on your raspberry topping, if you want the other toppings you have to cool them down a bit so it wont all melt. Cool the tray in the freezer for 15+ minutes, then remove from pan and store in a good freezer container. I use my Tupperware cake containers because they are air tight and these little babies are too precious to get freezer burn! they usually have a shelf life of 3+ months but I would guess they will not be around that long. ....:)

I hope this blog makes you smile and think I can have dessert today, they are Mini's after all and Elizabeth Taylor said I can. Go dessert everyone we all need a little Dessert.

Saving Grace?

Like the kid says at the end of the TV show what does that mean? Well let me tell you what it means for me.

When things are hectic, chaotic, stressful.... or anything else( ectic ) I can usually be found doing one of (3) things. Cleaning, reading, cooking. Not necessarily in that order either.

I had one of those weeks this week,,, with extra Gaga duties, a big catering event to prep for, and a sick cat, then toss in my Mother for extra measure, I guess you could say I hit the Mother load of Ectic.... YUCK!

So what do you do? I think well if only I was a drinker, a couple of those stiff drinks would certainly make this all better, naw I don't like liquor that much, how about a smoke, no don't like the smell, what about just staying in bed all day, no I have arthritis that alone will kick a much stronger than I to their knees in Pain if they lay around too long.

So I cooked and cleaned, and cursed a small bit out of frustration, Yep I am not perfect, Sorry to disappoint everyone, but as my so gracious granddaughter reminded Me recently I don't even go to church so what would I know.! Well she is partly right, I don't go to church but I do believe and how we practice that belief is up to us, so I guess I am practicing my beliefs in my Kitchen, on my Chair in the garden reading, or when I have a vacuum in my hand cleaning my house and of course there is always my four -legged friends who keep me sane even though they all leave a surprise for you you really don't want. ...

We are all different in this world, we are never perfect, rarely not sinful, forgiving we try? accepting mostly, Loving not always, understanding still working on it, but always, always in God's SAVING GRACE!
Maybe I should make this my new Mantra, no I probably screw it up eventually. Gotta Love Ya Diva.

Lasagna New York Style!

Stuffed with Meat Lasagna
Divadish's Lasagna is not your average dry, tasteless slice of mushy pasta served up at your local restaurant... Yuck to that.. What is though is a mouthful of Yum.

Layer by layer of delicious white wine red meat sauce then a layer of (3) cheese seasoned cheese, sliced Italian sausages, and spoonfuls of smooth Basil Ricotta.
Repeat this till the full size pan is one inch from the top of rim, then bake to all the flavors and cheeses melt app. 1+ hours @ 350'

This baby weighs a Ton, and that is the way it is suppose to be if made right, it should be loaded with sausages, meats, cheese, and repeat, making this a mouthwatering experience you can't wait to sink your teeth into. I will guarantee you will not taste any better anywhere, so I have been told by countless clients who have had My Lasagna. New York Apple Pie!

What makes delicious apple pie? of course the apples along with the right mix of spices added to apple mixture.

I have tasted countless apple pie slices from here to Tim Buck Too, and let me tell you all truthfully they are dry and flavorless. Then that thing with adding a slice of cheddar to it?! What the Heck is that all about? it's not a Hamburger! The apple pie slice should be a combination of tart and sweet with the just the right amount of each. Adding the right spices to it is how it does this and you can't fake that no matter how much cheddar you put on it. So Buck up people and wake up your inner senses for a Piece Of Pie.... and maybe you all will get lucky.... Hmmmmm?

What's for Dinner is the most common question of each and every day. Here is my suggestion.

Cranberry Salad with Sweet Yellow Bell Peppers, fresh mushroom slices, blue cheese crumbles and a balsamic vignette dressing.

Serve with any good hearty bread, maybe a glass of red wine, and a good cup of coffee. You have a nice light dinner, if you want more protein add some grilled chicken or shrimp. Now doesn't that sound healthy, simple and delicious? Now if you must be a little naughty for dessert you could have a small slice of dark chocolate and again that good cup of coffee black.
