Ginger Steak #48

Ginger Steak & Edamame Beans
Comfort Food:
Whole grain rice, flank steak,edamame (soybeans) and a little fire added to round out this yummy dish.
When I plan my evening dinners I always , always spice things up a notch.
Why?
Because the heat of spices are very good for your body.
How?
It breaks down our cholesterol,and buildups in our arteries.
It also adds flavor and we use less salt because it is not needed.
When you do you own meal planning look at what you have for (Hot) Spices in your cupboards.
Experiment with a couple of them, on a smaller scale at first so to not burn anyone out of trying their first bite.
After a few meals with some heat added to their palate, they will not even notice the heat but will notice the additional flavor it brings out in each meal and also adds to as well.

Some spices to try:
  • Cayenne
  • Cumin
  • Ancho
  • Pepperika
  • Red Pepper

Alexander's Greek Chicken!


Alexander's Greek Chicken 
I named this chicken dish after my father,
Alexander Harry Ianos.
Or as he liked to call himself
"Alexander the Great "

He was very proud of his heritage, and often told people he had ancestral roots to the great Kings of Greece.
Well I know we had Spartan blood in our veins, because if you disagreed with him
there was definately sparks, swords, and tempers all over the place!
Yes he was a male Diva in the kitchen but his food was to Die For! 
So Yes I can be the same way @ times with my creative temperament, but I do not throw anything @ you!
The Greek chicken dish is basted with a chickenbroth & lemon sauce, 
garlic & oregano& sea salt and seared first then baked @ 375 for app. 40 minutes till inside temp@165' which is done to safety rules.
I served it over angel hair pasta mixed with a garlic & caramelized onion and topped with a feta & kalamari olive cheese mixture.

If my Dad was still alive he would of said I hope,
that this was up to his very High Standards!
So this dish is for you Dad, tell the guy's I say Hi, Your daughter; Gianna.

Sugars #48

Sweet, Sweet Sugar...hmmmmmmmmmmmm!? 
 It looks better on paper than in Us!
Why?
Mini-Chocolate Truffles
Because we eat too much of it, have too much of it in our diets, and we ae becoming obese because of it!
The above picture is of my Mini's Chocolate Cakes. (15 calories each)
They are a small bite of Orgasmic Delight!
Very Low in sugar, Low in calories, and full of dark chocolate flavor!

My secret, using Greek Yogurt for 1/2 of the sugar the recipe called for instead.
This cuts down on the sugar overload taste for us and the recipe.
Of course you need to keep balance in the recipes with wet ingredients but that is what I do for a living, so it works.
For you I suggest elimanating (1) egg of recipe and cut back on other liquids such as oils, or waters.
Once you have played with it once and make a sample batch and taste one then you can always add more of something, but cannot back it out!

So let's look next at what types of sugars are really good for us in moderation.
  • Brown Cane sugar
  • Turbinado (Hawaiian sugar)
  • White 
  • Honeys
  • Fruit sugars
These are all of our Natural choices, and should not be confused with Artificial Sweeteners.
Nor should we use Artificial sweeteners in excess in our diets as the word says it Best,, Artificial.

Spaghetti Bolognese

Spaghetti Bolognese
This is one of Divadish's all time favorite comfort foods!
It is rich, full of tender meats, and it is definitely one to Lust for!
The sauce is thicker , because it has tomato chunks in it and chopped onions.
The combination's of simmered meats, and a special mix of seasonings, and letting it slow cook for over 8+ hours gives this dish it's rich but delicate taste.
For this particular  recipe I used Flank steak & 93% ground chuck.
I browned them in roasted garlic & olive oil,added my special seasonings.
Then added it to my chunky tomato sauce base, it is a nice and thick sauce and it holds on to the pasta noodles like you would to a Life Raft if you were drowning in a sea of Tomato Sauce!
Now of course this would not be a complete meal without a large Italian/Feta Salad and of course a loaf of sourdough bread.
Of course for dessert you would add a mini Raspberry & Chocolate Cheesecake, to complete your dinning experience.

Organic # 46

Organic or not Organic that is the real question these days?

How do you decide?
What exactly is organic?
Will it be hard to eat this way?
What will I be able to eat?
Will the family eat it?

These are all good questions and let's answer them.
  • Eating naturally takes patience, and relearning> It is about making better healthier choices, skipping the fast foods, and convenience foods, and making time to make something and somethings from scratch!
  • Whole grains, no additives, no BHT's, No Processed.
  • No not hard but different, you will enjoy food more because it will taste better, richer, more pure, and satisfying too, because it is not filled with empty calories.
  • Sure everyone will eat it, as long as you are not forcing them to try something really Weird... These are normal foods but the way & what we put in it, or how we choose our products is the key to eating organic.

Preservatives # 45

It is all in the packaging that makes consumers buy.
This is very True!
The colors, logos, name regonition, placement on shelves.
I sometimes think we as consumers have been Brain-Washed so much by commercials that we don't even think anymore.

Pretty -Scary-Stuff, we all need to Wake-Up- and Smell the Coffee people!
If you break down the advertising, read the lables on the products, really read them, you will see that the manufactures of these so called nutritious cearles, syrups, breads,canned soups, pre-made boxed dinners, rices,etc,
all have the same thing in common, PRESERVATIVES!!!!

Now this might sound to you that you will need a special nutrition degree to understand these ingredient labels, 
that answer would be a Big Fat No!
All you need is to look for the Big (3) Baddies.
Sugars, Salt, Fats.
Let's break this down a little further for you.
  • High fructose Corn syrups
  • Corn Syrups
  • Malted sugars
  • Artificial sweetners
  • Low-sugars
  • Sodium
  • Flavorings with salt added
  • Meat by-products
  • MSG
  • Fats,meat -by-products
  • Hydrogenated oils,
  • Cottonseed
  • Coconut
  • Palm oils
  • Corn oils
  • Grapeseed
  • Shortenings
Anything in these catergories or others that just sound like they are related are what we call in the industry as Fillers.
They extend the Life of products on shelves, add artificial flavors and colors to make our food pretty, and send our Bodies into a War with itself!
Our bodies cannot process all this Fake Stuff, so it does what it is condtion too, it sends in the Warriors, dressed up in Insulin to fight the attacking chemicals, what do We get from all this extra Insulin? FAT!FAT! FAT!


You cannot have all that free flowing insulin in your body, we are not made to handle it, and it sets you up to be doomed.


What can you do to stop this Battle?
Will it be hard work?
Can you the average consumer wage your own War against this?


The answer is a definite Yes!! Oh Yes you can...!


You, and you alone can read the ingredient labels, before you put it in your cart, and buy products that do not add these preservatives for their benefit not Yours!
Once you have bought these good items, and know what is good for you, you can slowly add items as you see the difference these small changes have made to you and your family.

Happy # 41

What makes You HAPPY!!!!!?

Is it your favorite shirt with the holes in the elbows?

Spending time with your family?

Or spending time with your Lover?


Gong for a walk with your best (4) legged friend? or human friend?


Enjoying a good cup of coffee, and inhaling it's strong aroma's?

Having that first sip of sweetened English Tea every-morning?

Birthdays, the joy of (1) more Year of Life?

Food, how does Food fit into your equation for Happiness?

These are all very good questions, and I have my own answers for some of them.

  • In no particular order I will give you my short list of Happiness!
  • English Tea, the sweetness and cream combination and holding that warm cup in my hand as I take my 1st. sip is like Heaven to me.
  • Birthday's, have always been very Special to Me, so much so when my birthday Month April hits the calender I do something special for myself each and every day! I have made it a tradition in my family, and with my friends too. So much so I have made my friends and family doing some of the same.
  • Walk with my (4) legged friend Travis,, Love that dog, he is loyal, kind, Sweet, Bag of Shedding Fur, but I really don't care about the mess, I do care how he looks out for me, I am his main focus, and we are a Team!
  • Food is important to me, I am a Chef, but I look at food as nourishment, and value to my Body.
Not as I gotta stick the first thing that comes along in my mouth! When I eat, I really savor my food, I know what I put in it, and want to taste it. Not just Wolf it down like it was just something to fill my Hunger, I want to satisfy it.
When you can look at food this way instead of the other you will be the Conquer over the Over-Eating, Binging, Bad Food Choices, and how you just look at food in general.

Every year I have a Birthday, I promise myself to do one thing good for myself, and every year I try to succed in keeping that Promise. As I near the Big (60) Birthday, I will be 59 this year, I realize I must still keep pushing myself to be better, take care more, and reach for the Stars, Physically ,Emotionally, and Spiritually.
If you can continue down that path of enrichment always your Life will be exactly what you want it to be!

We are not a Reality Show, we are Human, Warm Blood beings, that make mistakes, but are capable of getting back up and learning to do it right, it may take more than once, but you still have The Power to do it always.!

Finding our answers to perplexing questions, or doubts is only a click away!

With that said you also have to realize that with all that information out there on the World-Wide Web, you still have to decipher it and understand it too.

So here is my advice, go to sites that have documented studies, and explain the most common causes or problems from ailments, medications, weight-loss, food alergyies etc.


One that I have found to be very helpful is Mayo- Clinic web site. 
They have their own verfied pages, search engines, and documented studies.


Another fool- proof way is also going to your local library, go into the reference sections and look under your category of interest.


The third way is to consult a professional counselor. This can be through your own Doctor's referrals, or through your medical coverage customer service representative.


Most important to remember here, is you always have choices, and you always must execute those choices if you want a well informed decision to come out of it.
Choices, give us information, information gives us decisions, decisions give us the tools to change.
You make those choices and changes to have a better YOU!

Food Journaling #39

Having  a Food Journal is very helpful. It is our Diary to our eating habits.
If we write down what we eat everyday and for each meal and snack we are less likely to over-eat!

It has been proven scientifically, and of course I think we all need visuals to understand what we are doing.

When you journal you see patterns of what you are doing and not doing.
Meaning:
When you are eating
What
Portion size
If  it was satisfying
Did you exercise before or after
Snacks
Cravings
Bedtimes

Now you can use any notebook or something pretty or masculine depending on gender.
 A Journal tells Us what we are doing to ourselves and our bodies.
It keeps us accountable and shows us in writing like a contract what we need to change and improve on.
We are what we eat, and this is another way to show us that.
I know this works I used it myself and I have maintained my weight for over 5+ years now.

Binge Eating#37

Eating on the run, skipping meals, fast  food,cravings.


 These bad habits lead us all to Binge Eating. We are never properly sitting down long enough for our food to register with our brains. 

We are also eatting foods loaded with Salt, Sugar, and Processed.
Then we keep up the hamster routine when we keep up the chasing, the running, the skipping, and the bad choices of foods.

Our bodies are pretty complicated machines, and complex. 
Where it is accepting of our bad choices, & habits, it still needs to be treated like a temple. 

We do need to get back to basics, it is not Rocket Science, or Brain Surgery, you do not need a degree in Nutrition, what you do need is dedication to yourself and your family to nourish your body or bodies with a well balanced meal and follow through with it through out the course of your day.


Our Farming History would say (3) squares a day, and it will fuel you for the whole day!
When they said squares, that meant Meat, potatato,vegetables,bread,butter, fruits,dessert.
All made fresh each day, not frozen, microwaved, or with preservatives.

Now I realize this can be daunting, and a little difficult, but with thought and planning you can do meals ahead and freeze them, and then reheat, when needed.
Giving you the convenience of good meals and family time with Loved ones.
We all are busy and we all Love convenience, but we should never, ever sacrifice our health for it.

Recipe -Broccoli with Garlic Butter & Cashews

Miss Divadish Cooks!!!

Now don't get so excited it is only veggies... and Miss Divadish knows how some of you are still trying to feed them to your dog, or are pushy them around on your plates making believe you ate some.

Well no more! You will actually ask for seconds when you try this new recipe:
Broccoli & Garlic Butter W/Cashews.

Ingredients:
1 1/2 pounds of fresh broccolli cut into bite size pieces.
1/3 cup butter
1tbsp. brown sugar
3tbsps.soy sauce
2tsps.white vinegar
1/4 tsp. black pepper
2 cloves of garlic minced
1/3 cup chopped cashews

Heat of butter, soy sauce, vinegar,brown sugar,pepper, and garlic in pan till lightly brown.
set that aside.
Boil water add broccolli and cook till soft.
Add the above mixture, mix and top with chopped cashews.
When everyone tastes this delishious recipe they will be begging for more and you are the Veggie Hero of your Kitchen.

Soups

"Moroccan Lentil Soup" 

The weather is warming up slowly, but soup is good anytime. A bowl of hearty soup a slice of artsian bread 
paired with a salad and you have a complete meal... So without further adieu' here is my recipe for Moroccan Soup.


Ingredients:
2+onions chopped
2+ cloves of garlic or (Minced in Jar too)
1 tsp. ginger
6 cups water
1 cup of red lentils
1 (15 oz)can of garbanzo beans,drained
1 (19 oz.) can of cannellini beans
1 14.5 oz) can of Hunt's diced tomatoes
1/2 cup chopped celery
1/2 cup chopped carrotts
1tsp. garam masala
1.5 tsps ground cardamom
1/2 tsp.ground cayenne pepper
1/2 tsp. ground cumin
1tbsp. olive oil
Sautee onions garlic,carrots, celery,and sesonings .
cook lentils tiil soft, add reminder cooked beans, and then add the sauteed vegetables.
Then simmer all together for another 1+ hours till flavors blend together.


This is completely Vegetarian, Spicy, No Cholesterol, high in fiber & protein.
It will become a family favorite.
If you have to add meat I would suggest a mild Italian Chicken Sausage.
