Potato Salad

Italian Potato Salad
Potato Salad, is always a mainstay on everybody's summer picnics, BBQ's,Graduations,
or just about any event. 
I think it is because it is a all American favorite, like Apple -Pie, or a Ball park frank, or our hamburger.
It just goes with everything!

I do make my potato salad @ Divadish a little bit different though. 
My mother had a very good recipe that she gave to her daughters years ago,and we have changed it a bit over the years.
Here is my version:
  • Heavy Mayonnaise
  • 1/4-1/2 of half & half
  • 1/4 cup 2%Milk
  • a touch of White Vinegar
  • 1/4tsp. of dry mustard
  • 1/2 tsp. caraway seed
  •  a touch of Sea Salt
  • 1/4 tsp of Dill weed
  • Black pepper to taste
  • Shake in glass jar to all creamy, add to potato salad and taste.
  • If it is not quite creamy enough or tart enough you repeat the above recipe, in smaller measurements.
Making good creamy, not heavy mayo tasting, potato salad is a Work of Art, I know because I have had the others and they leave me going YUCK!
They are gooey, and like paste, and the potatoes are too soft, and the seasonings do not add punch to the salad.
Yes I know I am a DIVA>>> but why not be, it is afterall your picnic, your event, your occasion,
you all should be!

This Quiche pictured above is one of those fuel choices.

"Greek Foods"

Alexander's Greek Chicken
Greek recipes are very delicate combinations of many seasonings that add to it's wonderful flavors..
Because of that it is a delicacy that not everyone knows how to do well, or at all, and feels it is well above their knowledge level.
The Alexander's Greek Chicken is one such recipe, it contains many processes to get to it's finished state of elegance and juicy deliciousness, but once there and on your plate you will say it was all so worth it!
Seared whole chicken breats in  lime & olive oil and butter , then add your garlic, and paperika, and a touch of cayenne pepper. I also use a touch of Anise & fennel to round off the 
flavors, cook till meat temp is 160' and serve on top of Greek Spinach,& pasta or pasta, or Greek salad, there are many ways to or combinations to serve this Authentic Greek dish to your family & friends, or just yourself.


Jimmy the Greek from Rudolph's & St. Clair Broiler will Love to have his this way, and says it is a delicate balance to make good quality Greek Food, with all the restaurants he has owned over his career of 50+ years, he does-not serve Greek foods in any of his current restaurants.
He will definitely Eat it, and absolutely Loves it, but he sticks to high quality American fare, which I will tell you personally is delish!

PERSONAL CHEF

Mediterranean Cooking
Every Private Chef, or Personal Chef, has their own specialty or cuisine that they are noted for in their profession.
At Divadish Kitchens we are known for true & original Mediterranean cooking.
While restaurants will put fancy names, or labels on dishes to create the feel of the countries you are ordering and eating, I as a Chef make each and every dish taste like the recipes my great-grandparents gave to my parents.
To me the later is more important, after-all taste is everything, and the name of a dish does not make it taste good!

The above picture is Greek Cod.
This fish is seared in dark green olive oil & sweet cream organic butter, add in Fresh grown Rosemary and a touch of Greek Oregano.
Then a bit of Lime juice and heat up frying pan to med-high and grill it to the fish begins to flake apart, telling you the fish is ready to eat.
This meal can be fixed with many different seasonings that make it taste a little different with each seasoning that is brought into the dish.
Adding the fruit bowl with organic Pink Lady Apples chopped into small chunks, and Red organic grapes,
with (2) tablespoons of Maytag Bleu cheese is another delicious way to add flavor, cheese and fruits to your dinner and or cuisine.
I often will add fennel & anise seasonings to the fruits and mix it all together with other types of cheeses and again this changes the flavors and the experience.

What's the best part is even if you do not have the cup or glass of milk to drink, these cookies still have just the right amount of moistness to still be eaten alone, and No they will not choke you like some of others, where if you did not have something to swallow down it was so dry, you felt like you were coughing up a HAIRBALL!!!

Greek Hotdog!

Greek Hotdog

Never underestimate the power of The Greek Word... This was a Line from the movie The Big Fat Greek Wedding!
I never have nor will I ever doubt the power of Greek...
Think of it, Greek food is to Die for, figuratively speaking of course.
But my dear old Daddy would say Yes I would Die for it, because once his poor mind went and he was put into managed care because of it, he would consistently ask Me Honey, do you have a Salami sandwich?
Of course it broke my heart to see the end results of dementia, but I would bring my Dad his favorite sandwich and we would enjoy it together in Golden Silence of Greek Eating and be Happy!

The above picture is another one of those Golden Moments.
I took Kosher hotdogs,,, because they are the Best, Natural Casings, and grilled them in olive oil & a dab of butter, in a small frying pan... Now I know I said grill, well you can do it that way too if you know how...
So lucky for Me I do...!
I added a little Rosemary, Greek Oregano, Caraway seeds, & Red Pepper flakes, as my seasonings to sauerkraut and simmered it till hot, and put this mixture on top of hotdog, with just a touch of spicy mustard on toasted bun, Yes it was to Melt in Your Mouth Deliciousness, or as I like to say DIVALICIOUS!!!!
So if you are Hungary for something Greek, and it is not Lamb, this new twist to a all American Favorite

Caramel French Toast

Caramel French Toast
Divadish loves to twist things up a bit, and adding a custom butter to this family favorite made it a little more interesting.

What did I do pray tell??? I took some sweet cream butter, softened a bit, added some semi-sweet DaVinci Caramel Syrup, a touch of cinnammon, and blended it all together.
It was a nice bit of caramel & a hint of cinnamon to make it a perfect butter for this family favorite.
It even past muster with my granddaughter this week when her one and only GaGa had a overnight with her and made it for her breakfast...!
So next time when you are looking @ that same Old -Breakfast and want to twist it up a bit, call Divadish, she can do it for you alright and then some.
Gotta go for now, I hear my Breakfast calling Me, and it says I am Hungary!

Berry -Wine Chicken

Divadish Loves too cook with Wines... Why,, because you can sip a little out of the bottle too!!! Just kidding......!

No, really, the taste that wines add to the flavors of meats, soups, sauces, and salad dressings, is Phenomenal!!!
Combine all of that with special blends of seasoning and you have a Winner each and every time.
The above picture is just one particular winner.
I marinated (4) chicken thighs over night in a semi-sweet berry wine & lime juice, with my special blends of seasonings, all sat in their juices in a baking dish in fridge app. 8-10 hours till I needed them for grilling the next day.

I was having a very good friend over for dinner and I wanted to try this brand new recipe out on her, you see she is my Food-Guinea Pig!!!! Yeah it is a very good job, and I am SORRY but the Position is filled for now, and No she is not looking to give up her role anytime soon.. SORRY!!!!
So anyway dinner was for 6:00PM on Wednesday, I grilled them up in app. 25 minutes, added a little extra marinade after cooking, and set aside in warmer dish to finish off remaining menu sides.

The next side was my Parmesan Cheese Potatoes. Can you smack your lips together now and repeat after me,,,, YUM>>>>> YUM>>> YUM>>>>! These babies are like Orgasmic, and when they go in your mouth all you can think of is there more!!!! I was very proud of the food choices for that nights Food Guinea Pig Event, and my Dear Friend Karen was too. 
We ate, we drank, we laughed, and then it got to dessert time, and we just had to have some Lemon Sorbet to clean our palates first,,,, then we had a piece of Chocolate Ecstasy Gluten Free Cake, with a Chocolate Gnache Icing .... And Whip Cream & Chocolate Bits,,,, YEP, you are wetting your pants now, but Sorry it was delicious and we almost licked the plates too afterwards.... HeH my house my Rules...lol...

Lasagna @ Divadish

Spinach Feta Lasagna!   
Divadish loves to make the family style lasagna pictured above.
Lasagna is a work of Art when you are making it.
Layer after layer of Meats, Sauce, Ricotta, Cheeses, Spinach,Noodles, then repeat it until the lasagna pan is 2/3 full of this mixture, and add the final touch of two large handfuls of Feta cheese on top.
Put into the oven @ 325' degrees and slow back all of this deliciousness for about (2) hours.
 Of course there are alot of other steps in between, like the sauce has to be martinated with the meats, and the seasonings you select for the combinations you are using in this particular type of lasagna is also very important.
Those are my Secret Recipes, and if I told you everything I would have to send my Cousins Vinnie & Quito over to take care of you's!!!!
So I will save you the discomfort of that, and you will have to order some of this Lasagna for yourself, and see what I am talkin about!

Gluten -Free Chocolate Cake!

 


We all LOVE CHOCOLATE!!!!!
Sometimes  we are allergic to the Gluten so desserts are a Big NO!
Not for this cake pictured.
This is Divadish's Gluten -Free Chocolate Cake.
I served this yummy slice of chocolate heaven today for Mother's Day.
My granddaughter could not believe it was totally made without flour, and it was made with a vegetable!?
What silliness is that, it taste too good she says, as she starts to attack her piece of cake with a vengeance.
I haven't  seen that  outside of the incident I did when my Mom gave Me my first chocolate Eclair... It's a New York thing!!!
